The launch of Two Geckos and Co has seen mini mushroom farms start to flourish on kitchen benches across regional NSW and showcases the entrepreneurial talent of Duncan and Sara Wallace, who live on a small farm west of Narrabri.
After developing a passion for top quality homegrown food, Sara and Duncan decided they wanted to encourage others to make the shift.
“Oyster mushies are really healthy and you can build a meal around them,” Duncan explains.
“Also, by growing our own we can access varieties that are basically non-existent in regional areas like Narrabri. We enjoy quite a varied diet at home, but find we are probably cutting some meat out now compared to before and the mushrooms are a tasty, healthy alternative”.
In North West NSW winter is prime time to start your mushroom journey.
“Generally cooler weather is better because it’s just a bit easier to keep the temperature stable during winter,” Duncan explains.
“They’re not hard to grow. You just need a spot with a bit of ambient daylight, be clean with your hands and give them a spray a couple of times a day and that’s it. Within 10 -14 days you have your first crop of 300-400 gram oyster mushies.”
Two Geckos and Co are stockists of grow bags produced by LifeCykel. The company developed a system which operates on a completely circular economy where the substrate is made from spent coffee grounds which may then be used on the garden as compost.
“It’s a way to be more of a conscious consumer in a society that is so flat out,” Duncan said.
“We are seeing people wanting to source locally and chase that deep sense of satisfaction that comes with growing your own food. People are becoming more conscious of their footprint and what they’re contributing to society. We’re always busy, so convenience will always have a place, but we thought this was an easy way to help people get into some fresh, home grown veggies.”
